Rawa Idli






Ingredients
  1. 1 cup rawa or suji
  2. 1 cup dahi ( yogurt)
  3. 1/2 cup water
  4. salt to test
  5. 1/2 tsp. Turmeric
  6. curry leaves
  7. 2 tsp. Sugar (power)
  8. 1/2 tsp. muster
  9. lemon juice
Method
  • In a dish add dahi and suji and mix
  • Keep the mixture for 8 to 9 hours to plastic airtight container.
  • Add to salt to mix and pour it in an idli pot. Steam it for 15 minutes.
  • After taking it out of the pot keep it for 5 minutes.
  • Fry it by taking in a pan, oil , curry leaves, mustard, salt, turmeric and mix properly.
  • Add sugar and lemon to taste.
  • Enjoy the fried Rawa ldli breakfast. :)

Corn Upma

Ingredients
  1. 1 Cup  (Rawa ,Suji) Baking
  2. 4 tbsp. oil
  3. 1 tsp. mustard seeds
  4. few curry leaves
  5. green chillies chopped
  6. 1 big onion chopped
  7. 1/2cup corn (boil)
  8. 1/4cup peas
  9. 3 cups water
  10. 1 tsp. lemon juice or  Coriander  
  11. salt to taste
Method

  • Mix 3tbsp. oil Suji in a flat glass dish. Spread evenly at the bottom of the dish and microwave for 3 minutes.
  • Mix again and immediately mix well. Keep aside.
  • In a separate dish, put 1 tbsp. oil. add Mustard, curry leaves, onion, green chillies, and peas Microwave for 5 minutes.
  • Add salt , corn, water. Gradually add suji, stirring constantly. Microwave covered for 3 minutes Stir.
  • Remove cover and lemon juice and Coriander microwave for 1minutes. Serve. :)

 

Gajar ka Halwa

Ingredients
  1. 1/2 gm. Carrots peeled and grated
  2. 1 lighter  Milk
  3. 1/2 Cup Sugar
  4. 100 gm. Khoya
  5. 2 tbsp. desi Ghee
  6.  Seeds of 2 Green Cardamom
  7. 15 gm. Cashews

Method
  1. Mix grated carrots, milk and ghee in a big deep bowl and heat it over medium flame until the mixture goes thick.
  2. Add sugar, mix it and after sometime add khoya (mawa) and again mix nicely.
  3. Add cardamom and cashews.
  4. Serve hot. :)

Pav Bhaji

Ingredients

  1. 3 Medium sized Potatoes,
  2. 1/2 Cup peas
  3. 2 Carrots
  4. 1/2 cup chopped Cauliflower
  5. 1 cup chopped Cabbage and  1 Capsicum
  6. 4 tbsp. Oil
  7. 3 tbsp. Butter
  8. 2 Onions chopped
  9. 1 tsp. Ginger-Garlic paste
  10. 2 tsp. Pav Bhaji masala (available in market)
  11. 1/4 tsp. Turmeric powder
  12. 1 cup Tomato chapped
  13. 1 tbsp. chopped Coriander
  14. 1 lemon
  15. Salt to test
  16. 1tbsp. red chilli powder

Method

  1. Mix potatoes and the rest of the vegetables in the Pressure Cooker, till three (3) whistles. 
  2. After this, mash the vegetables nicely.
  3. Then, take some oil in a pan (kadaai) and mix onions, ginger-garlic paste and tomatoes. Fry them till the mixture turns brown.
  4. Add salt, turmeric, red chilli powder and Pav Bhaji masala.
  5. Again, mash the mixture.
  6. Add butter and coriander. (this is for garnishing)
  7. Serve with chopped onions and some pieces of lemon. :)

Rava Ladoo


 Ingredients
  1. Sooji or Rava 3Cups
  2. Ghee 4tbsp.
  3. cardamom powder 1/2 tsp.
  4. Milkmaid 1tin (400gm)
Method
  • In a karahi dry roast the sooji till pinkish brown,
  • Then add the ghee and roast for another 10 minutes.
  • Add the Milkmaid and cook till the mixture leaves the sides of the karahi Add the cardamom powder and mix well.
  • Remove from fire, cool and form into small ladoos.

Nutty Log

Ingredients
  1. Butter   30gm
  2. Vanilla  1tbsp.
  3. Cashew Nuts   2cup for crushed
  4. Biscuits       4 cups crushed
  5. Milkmaid   400gm
Method
  • Beat the butter with the Milkmaid, vanilla ,and 1cup crushed nuts.
  • Incorporate the crushed biscuits, little by little it forms a smooth dough.
  • Form into three logs and roll each over the rest of crushed nuts spread on a flat pate so that the log gets coated with nuts. Wrap in a sheet of cling film/ aluminium foil.
  • Place in refrigerator for about 1 hour.

 

Amrakhand



Ingredients
  1. Curd         500gm
  2. Paneer      100gm
  3. Milkmaid  400gm
  4. Mango essence 1tsp

Method :
Put Curd in a muslin Cloth and  allow to hang for 12 minutes. Press to make sure that excess water is removed.
 Mash  paneer till smooth and creamy Blend with Milkmaid and mango essence. Fold in curd and chill till almost frozen
Note---(Mixer may be used for a smooth product. No cooking )



 
 

 

Coconut Chutney

Ingredients
  1. Cup freshly grated coconut
  2. 3 Green chilies (small size)
  3. 1/2 Piece of Ginger
  4.  Salt to taste
 Tempering
  1. 1 tsp. Oil
  2. 1/2 tsp. Mustard seeds
  3. 1 dry, red chili
  4. few curry leaves
 
Method
  • Grind coconut, green chilies and ginger together, by adding enough water to make a thick past
  • Add a little salt to taste. Remove chutney into a serving bowl.
  •  Oil, mustard red chili and curry leaves in small  pan uncovered for 2minutes.
  • Pour the hot oil on the chutney. Serve chutney

Black forest cake

Ingredients
  1. Milkmaid   1 tin
  2. Maida   225gm
  3. Cocoa     4  tbsp.
  4. Aerated cola drink   200ml
  5. Baking powder   1tsp
  6. Soda bicarbonate     1tsp
  7. Cream   1 cup
  8. Tinned cherries 1 small tin
  9. Chocolate bar 40 gm.

Method

Lightly grease and flour a baking tin preheat the oven to 150'C melt the butter in pan Cool and add milkmaid sift together the Maida baking powder soda and cocoa.
Mix the Maida with the Milkmaid butter mixture alternating with cola till the Maida and cola are over. Lmmediately  pour into the prepared tin and bake for 40 minutes at 150'c cool and slit horizontally into two.
whip cream till light and fluffy sandwich the two layers of cake with whipped cream and destined cherries Top with whipped cream and cherries sprinkle generously with grated chocolate Chill and serve.






 

Apple crumble

Ingredients
  1. Milkmaid    1tin
  2. Apple    1kg
  3. Butter   125gm
  4. Maida   150gm

Method

Preheat oven to 160c Mix together butter and milkmaid and heat for 5 minutes. Keep aside to cool. Peel and slice apples. In an ovenproof dish, place the apple slices in layers. Press lightly while putting the apple slices pour the cooled Milkmaid mixture over it and spread evenly. Mix the Maida, and butter to crumbly. Bake at 160c for 30minutes in a preheated oven..

Coconut Laddoo

Ingredients

  1. Milkmaid  1 tin
  2. Desiccated Coconut powder  4 Cup

Method

Keep aside 1/2 cup Coconut powder. Add remaining Coconut powder to Milkmaid and cook on a slow fire till the Mixture leaves the sides of the pan cool and roll into small laddoos with buttered hands Roll in coconut powder and serve.

Firni

    Ingredients

  1. 1 Liter Milk
  2. 1/2 cup Uncooked rice
  3. 1 cup Sugar
  4.  4 Cardamoms
  5. 10 Badams
  6. 15 Pistachios
  7. A few drops Keora Essence
  Method      
   Soak Rice in Water for at least 2 hours. Drain water and dry thoroughly place dried rice in jar and run Mixer at speed 3 minutes until rice is finely powdered. bring Milk to boil in high flame stir continuously to avoid cream forming on top reduce heat and add powdered rice and Sugar, stirring continuously for 15 minutes till thickened. remove from heat add Keora essence and cardamom powder after cooling to Pista on top set under refrigeration for at least two hours before serving

Chocolate milk shake

  Ingredients
  1. 4  Cups cold milk  
  2.  5 tsp. sweetened cocoa   powder
  3. 2  big cups commercially available chocolate ice cream
  Method

Blend milk and cocoa powder at speed 1for 20 seconds. Add the ice cream and whip at speed 1 for a further 25 seconds Serve in chilled glasses.

Kheer

Ingredients

  1. Milk   2 liter
  2. Rice   100 gm.
  3. Chopped Nuts
  4. Elaichi powder  3
  5. Sugar    150 gm 
Method

Wash rice and pressure cook in Milk for 1hour (or cook on slow fire till rice is soft).Add the Sugar Remove from fire. serve Garnished with Nuts & Elaichi powder.


 

Kalakand

Ingredients
  1. Milkmaid                         1tin
  2. Paneer                              1/2 kg
  3. Elaichi                              4 powdered
  4. full cream milk powder    2 tbsp.
  5. Silver  (barakh)                    (silver leaves) 1

Method
Mash Paneer coarsely and add milk powder to it. add milkmaid and mix heat the mixture in a thick bottomed pan. cook on medium heat with constant stirring till the mixture becomes thick. 10 minutes Remove from fire and spread onto a greased plate Sprinkle Elaichi powder top with silver barakh (silver leaves). Cool and cut into squares.


 

thai green curry

Ingredients
  1. baby corn cut into half    100gm
  2. florets of broccoli      10
  3. carrot    1/2 sliced
  4. brown sugar     2 tbsp.
  5. oil     2 tbsp.
  6. coconut milk  2 cups
Green curry paste

  1. green chilies  6
  2. onion  1/2 chopped
  3. garlic  1 tbsp.
  4. ginger  1/2 tbsp.
  5. lemon  1
  6. basil or coriander
  7. cumin seeds 1 tsp.
  8. coriander seeds 1 tsp.
  9. peppercorns 1/2 tsp.
  10. grated nutmeg 1/4 tsp.
  11. salt to test


method

prepare the green curry paste by grinding everything together with about 1/2 cup water. in a add green paste &oil mix well 5minutes add vegetables. mix well  for 10 minutes. Add sugar and coconut milk mix well 7minutes. let it stand for 5 minutes. check salt serve garnished with basil leaves.

  5. Guavas            2
  6. Salt                 to taste
  7. Apples            2
  8. Watermelons   1/4
  9. Musk melon    1/2
  10. Bananas           3
  11. Pomegranate    1
  12. Black pepper   to taste
  13. lemon              to taste



Method:---
Remove the skin of all the Fruits and cut it into small cubes. Add Salt, Lemon and Black pepper powder according to taste. Mix well. place the Mixture in the refrigerator for about half an hour. cool it and relish it.

Tooty-fruity hot cakes…

Procedure


Ingredients:

  1. 2 Cup Maida (all-purpose flour)
  2. 1 Cup Sugar
  3. 1 Teaspoon Baking power
  4. 1/4 Teaspoon Soda
  5. 100 Gram Butter
  6. 200 Ml Milk
  7. 100 Gram Milk power
  8. Tooty-fruity (Of course, as it is suggested by the title)

Method:

  1. Mix butter and sugar powder in a bowl and beat well for 45 minutes.
  2. Mix Maida (all-purpose flour), baking powder and soda. Filter the mixture 3 times. Keep it aside.
  3. Mix both the mixtures with milk and milk powder. Beat well till mixture is smooth and light
  4. Time to add the tooty-fruity mixture!
  5. Take a round 6″-7″ diameter micro proof glass dish or a micro proof plastic container. The container should have 4″ height with straight sides. Line the container with brown paper. Grease paper with butter. Now, pour the cake batter in it.
  6. Microwave this for 6 minutes. Let it stand for 5 minutes in the microwave. After you may take it out, put it upside down in a dish and start eating before it gets cooled

Blueberry Soy Shake

Ingredients
  1. Fresh/frozen blueberries 1 cup
  2. Vanilla flavored soy milk  1 cup
  3. Soy protein-isolate powder  1 cup
  4. Plain yoghurt  1/2 cup
  5. Sugar 1 tbsp.
Method
Combine all the ingredients in a blender until smooth. Serve in a glass, chilled and garnish with blueberries. Soy protein isolates makes it a healthy drink by contributing about 4 gm. protein along with a good amount of vitamin c and antioxidants from blueberries.

Tomato Mint Juice

Ingredients

  1. 4 Tomatoes
  2. Sugar to taste
  3. Fresh mint sprigs
  4. Pinch of salt

Method

Puree the tomatoes along with the mint sprigs, sugar and salt. Add water only if the juice seems very thick. Straining the juice is not a healthy option. Garnish with fresh mint leaves.
