Ingredients
- 500 gm Brinjal
 - 2 big onion
 - 1 medium size garlic
 - 5gm ginger
 - 2 medium size tomato
 - 1 green chilli
 - Salt to taste
 - 1 tsp. red chilli
 - 1tsp. coriander powder
 - 1/2 Turmeric powder
 - Oil - 2 tbsp.
 - 1/4 tbsp. methi dana
 - 1/4 tbsp. master
 - Coriander to garnish
 
- Wash the brinjal and make 3-4 holes in it with a knife (so that it doesn't burst while cooking). Grease it with oil (vegetable oil, of course), and bake it in a microwave for 16 minutes (800°)
 - Peel it.
 - In a Fry-pan take oil, methi dana, mustard, onion, ginger, garic, and tomato and fry till 5 minutes.
 - Add salt, turmeric powder, red chilli powder and coriander powder and mix well.
 - Finally add brinjal to this paste and fry for about 30 minutes.
 - Garnish with a coriander and serve hot.
